Baked Chicken Meatballs 🍝
Tender, garlicky chicken meatballs baked golden and simmered in marinara, lighter than beef but every bit as cozy.
Ingredients (serves 4)
- 1.5 lb ground chicken
- 0.5 cup breadcrumbs
- 1 egg
- 0.5 cup grated parmesan
- 3 cloves garlic
- 2 tbsp parsley
- 2 cups marinara sauce
- 1 tsp italian seasoning
- 0.5 tsp salt
- 0.5 tsp black pepper

Heat the oven to 425°F and line a sheet pan with parchment.

Mix the ground chicken with the breadcrumbs, egg, parmesan, minced garlic, chopped parsley, italian seasoning, salt, and pepper until just combined.

Roll into 16 meatballs with damp hands and space out on the pan.

Bake at 425°F until browned and 165°F inside, about 18 minutes.
