Ingredients (serves 4)

  • 1 lb ground beef
  • 3 tbsp sesame oil
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 4 cloves garlic
  • 1 tbsp ground ginger
  • 3 cups jasmine rice
  • 4 cups spinach
  • 2 carrots
  • 4 eggs

    Cook jasmine rice according to package directions.

    Heat 1 tbsp sesame oil in a skillet over medium-high heat. Add ground beef, cook until browned, breaking into small pieces, about 6 minutes.

    Add minced garlic, ground ginger, 2 tbsp soy sauce, and 1 tbsp brown sugar. Stir and cook 2 minutes. Set aside.

    In a clean skillet, sauté spinach with 1 tbsp sesame oil, 1 tbsp soy sauce, and 1 clove minced garlic until wilted, about 3 minutes. Set aside.

    Julienne carrots and sauté in remaining sesame oil until tender-crisp, about 4 minutes. Set aside.

    Fry 4 eggs sunny-side up or to preference.

    Divide rice into bowls. Arrange beef, spinach, and carrots on top. Crown each bowl with a fried egg.
