Black Bean Chicken 🖤
Tender chicken with umami-rich black bean sauce and sauteed peppers-earthy, savory, and deeply satisfying over steamed rice.
Ingredients (serves 4)
- 1.5 lb chicken breast
- 1/3 cup fermented black beans or 3 tbsp black bean sauce
- 2 bell peppers
- 4 cloves garlic
- 1 tbsp ginger
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 2 tbsp vegetable oil
- 1/2 cup chicken stock
- 1 tsp cornstarch

Cut chicken breast into bite-sized cubes and dice bell peppers.

Heat 2 tbsp vegetable oil in a large skillet over high heat. Cook chicken until golden and cooked through, about 6 minutes. Remove and set aside.

Add minced garlic and ginger to the skillet and cook for 30 seconds until fragrant.
