  • 1.5 lb chicken breast
  • 1.5 cups cashews
  • 2 bell peppers
  • 4 cloves garlic
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil
  • 1/2 cup chicken stock

    Cut chicken breast into 3/4-inch cubes and dice bell peppers into bite-sized pieces.

    Heat 2 tbsp vegetable oil in a large skillet over high heat. Cook chicken until golden and cooked through, about 6-7 minutes. Remove and set aside.

    Add minced garlic to the skillet and cook for 30 seconds until fragrant.
