Ingredients (serves 4)

  • 10 oz chow mein noodles
  • 1.5 lbs chicken breast
  • 2 cups cabbage
  • 1 carrot
  • 4 scallions
  • 4 cloves garlic
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil

    Cook chow mein noodles according to package directions. Drain well.

    Slice chicken breast into thin strips. Shred cabbage and julienne carrot.

    Heat 1 tablespoon oil in a large skillet or wok over high heat. Cook chicken for 4-5 minutes until cooked through. Remove to a plate.

    Add remaining oil. Stir-fry cabbage and carrot for 3 minutes.

    Add minced garlic and cook for 30 seconds. Return chicken to skillet along with cooked noodles.

    Drizzle soy sauce, oyster sauce, and sesame oil over noodles. Toss for 2-3 minutes. Top with sliced scallions and serve.
