Creamy Sausage Potato Soup 🥔
Spicy sausage, tender potatoes, and wilted kale in a silky cream broth, the restaurant favorite made in one pot at home.
Ingredients (serves 4)
- 1 lb sausage
- 4 potatoes
- 1 bunch kale
- 1 onion
- 4 cloves garlic
- 4 cups chicken stock
- 1 cup heavy cream
- 1/2 tsp red pepper flakes
- 4 slices bacon
- 1/2 cup Parmesan

Chop the bacon and cook in a Dutch oven over medium heat until crisp, about 5 minutes. Remove and set aside, leaving the fat.

Brown the sausage in the same pot, breaking it up, about 6 minutes. Add the diced onion and cook 4 minutes, then stir in minced garlic and red pepper flakes for 1 minute.

Slice the potatoes into thin half-moons and add with the chicken stock. Simmer until the potatoes are tender, about 15 minutes.

Strip and tear the kale and stir in until wilted, about 3 minutes.
