Cajun Chicken Pasta 🍗

Ingredients (serves 4)
- 1 lb chicken breast
- 8 oz penne
- 2 bell peppers
- 1 onion
- 3 cloves garlic
- 2 tsp paprika
- 1 tsp cayenne
- 1 tsp oregano
- 1 tsp garlic powder
- 1.5 cups heavy cream
- 0.75 cup grated parmesan
- 2 tbsp olive oil

Boil the penne in salted water until al dente, about 10 minutes, then drain, reserving 1 cup of pasta water.

Mix the paprika, cayenne, oregano, garlic powder, and 1 tsp salt. Slice the chicken into strips and toss with the spice mix.

Heat the olive oil in a 12-inch skillet over medium-high and sear the chicken until deeply browned and cooked through, 6 minutes. Set aside.

Slice the peppers and onion and cook in the same skillet until charred at the edges, 5 minutes, adding the minced garlic for the last minute.

Pour in the heavy cream, scrape up the browned bits, and simmer 3 minutes until slightly thickened.
