Instructions

  1. 1

Cook ramen noodles according to package directions until just tender, about 4 minutes. Drain well.

  2. 2

Heat 1 tbsp vegetable oil in a large skillet over high heat. Add noodles in an even layer and cook without stirring for 3-4 minutes until the bottom is crispy and golden. Transfer to a plate and tent with foil.

  3. 3

Slice steak thinly against the grain. Heat 1 tbsp vegetable oil in the skillet and cook beef until browned, about 3 minutes. Remove and set aside.

  4. 4

Add remaining oil and minced garlic to the skillet. Cook for 30 seconds, then add cabbage and carrots. Stir-fry for 2 minutes.

  5. 5

Whisk together beef stock, soy sauce, oyster sauce, and cornstarch. Pour into the skillet and simmer for 2 minutes until thickened, stirring often.

  6. 6

Return beef to the skillet, stir in sliced scallions, then pour entire mixture over the crispy noodles. Serve immediately.
