Ingredients (serves 4)

  • 1 lb pork tenderloin
  • 1 cup panko
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 8 slices bread
  • 1/2 cup pickles
  • 3 tbsp mustard
  • 1/4 cup mayonnaise
  • 3/4 cup vegetable oil
  • 1 tsp salt
  • 1/2 tsp black pepper

    Cut the tenderloin into 4 pieces. Place each between plastic wrap and pound to 1/4 inch thick. Season with salt and pepper.

    Set up flour, beaten eggs, and panko in three shallow dishes. Coat each cutlet in order, pressing the crumbs on firmly.

    Heat the oil in a 12-inch skillet over medium-high to 350°F. Fry the cutlets one or two at a time, 2 to 3 minutes per side, until golden and 145°F inside.

    Drain on a rack and sprinkle lightly with salt while hot.

    Toast the bread and spread with mayonnaise and mustard.
