  • 2 cups red enchilada sauce
  • 1.5 cups white rice
  • 1 red bell pepper
  • 1 yellow onion
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 1 tsp cumin
  • 1/4 cup cilantro
  • 1 lime
