Ingredients (serves 4)

  • 1 can pinto beans
  • 1 can black beans
  • 1.5 cups white rice
  • 1 cup corn
  • 1 onion
  • 3 cloves garlic
  • 1 lime
  • 1/4 cup cilantro
  • 2 tbsp olive oil
  • 1 tsp cumin
  • Salsa for serving

    Heat olive oil in a large pot over medium heat, sauté diced onion and minced garlic until softened, 3 minutes.
