  • 5 cups fresh spinach
  • 1 cup crumbled feta
  • 3 cloves garlic
  • 1 lemon
  • 2 tablespoons olive oil
  • Salt and black pepper
  • Red pepper flakes

    Bring a large pot of salted water to a boil. Cook penne until al dente, about 9 minutes. Reserve 1 cup pasta water before draining.

    While pasta cooks, heat olive oil in a large skillet over medium heat. Mince garlic and cook 1 minute until fragrant.

    Add spinach and stir until wilted, about 2 minutes. Season with salt, pepper, and red pepper flakes.

    Add hot pasta to the skillet with spinach. Toss in crumbled feta and lemon zest. Add reserved pasta water a splash at a time to create a light sauce.
