Mexican Pizza 🍕
Crispy stacked tortillas layered with beans and beef, then topped with bubbling cheese, salsa, and fresh tomato.
Ingredients (serves 4)
- 1 lb ground beef
- 2 tbsp chili powder
- 1 tsp cumin
- 1 can pinto beans
- 8 tortillas
- 2 tbsp vegetable oil
- 1 cup salsa
- 2 cups shredded cheddar cheese
- 2 tomatoes
- 3 scallions

Brown the ground beef over medium high until no pink remains, about 7 minutes, then drain and season with the chili powder and cumin.

Mash the drained pinto beans with a splash of water and warm through.
