Ingredients (serves 4)

  • 1 lb sausage
  • 2 bell peppers
  • 1 onion
  • 3 cloves garlic
  • 8 oz penne
  • 1 can crushed tomatoes
  • 2.5 cups chicken stock
  • 1 tsp italian seasoning
  • 0.5 cup grated parmesan
  • 2 tbsp olive oil

    Slice the sausage into rounds and brown in the olive oil in a large Dutch oven over medium-high heat, about 5 minutes.

    Slice the peppers and onion, add to the pot, and cook until softened, 5 minutes, then stir in the minced garlic and italian seasoning.

    Add the penne, crushed tomatoes, and chicken stock. Stir and bring to a boil.
