Porcupine Meatballs 🍅
Old-fashioned beef and rice meatballs simmered in tomato sauce until the rice pokes out, a retro family favorite.
Ingredients (serves 4)
- 1 lb ground beef
- 1/2 cup rice
- 1 onion
- 1 egg
- 2 cans tomato sauce
- 1 cup beef stock
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tbsp worcestershire

Mix the ground beef with the uncooked rice, egg, grated onion, garlic powder, paprika, 1 tsp salt, and 1/2 tsp black pepper.

Roll the mixture into 16 meatballs about 1.5 inches wide.

Whisk the tomato sauce, beef stock, and Worcestershire in a deep 12-inch skillet and bring to a simmer.

Nestle the meatballs into the sauce in a single layer, cover, and simmer over low heat until the rice is tender and the beef is cooked through, about 40 minutes, turning once halfway.
