  • 1 lb Sausage
  • 8 slices Bread
  • 1 1/2 cups Cheddar Cheese
  • 8 Eggs
  • 2 cups Milk
  • 1 tablespoon Dijon Mustard
  • 1 Onion
  • Salt
  • Black Pepper
  • 1/2 teaspoon Sage

    Cook sausage in a large skillet over medium-high heat, breaking into small crumbles as it cooks, about 8 minutes. Drain and set aside.

    Dice onion and cook in same skillet 3 minutes, then add back sausage. Season with salt and pepper.

    Cut bread into 1-inch cubes and place in a buttered 9x13 baking dish.

    Whisk together 8 eggs, milk, mustard, sage, salt, and pepper in a large bowl.

    Spread sausage mixture over bread, sprinkle with cheese, then pour egg mixture evenly over top.

    Preheat oven to 350°F. Bake casserole covered for 25 minutes, then uncovered for 15 minutes until puffed and golden.
