Ingredients (serves 4)

  • 2 cups rice
  • 1 can black beans
  • 1 cup salsa
  • 1 cup cheddar cheese
  • 1 onion
  • 3 cloves garlic
  • 1 lime
  • 1/2 cup cilantro
  • 2 tbsp cumin
  • salt
  • black pepper
  • olive oil

    Cook rice in a pot with 4 cups water and salt, covered, until tender, 18 minutes.

    Dice onion and mince garlic. Heat 1 tbsp olive oil in a large skillet over medium-high heat.

    Add ground beef and cook, breaking it apart with a spoon, until browned and internal temp reaches 160°F, about 8 minutes.

    Add onion, garlic, cumin, salt, and pepper to beef. Stir and cook 2 minutes.
