Chicken Enchilada Skillet 🌮
Shredded chicken, tortillas, and cheese baked in red sauce until golden, a Tex-Mex favorite that reheats beautifully.
Ingredients (serves 4)
- 2 lb chicken breast
- 8 corn tortillas
- 2 cups salsa
- 1.5 cups cheddar cheese
- 1 cup sour cream
- 1 onion
- 2 cloves garlic
- Salt and black pepper

Preheat oven to 375 degrees F

Boil chicken in salted water for 15 minutes until cooked through, let cool, then shred

Dice onion and mince garlic, cook in a skillet for 2 minutes

Mix shredded chicken with sour cream, onion, garlic, salt, and pepper

Spread layer of salsa in bottom of 9x13 baking dish
