Shrimp Fried Rice with Eggs 🍚
Day-old rice wok-tossed with tender shrimp, scrambled eggs, peas, and a light soy-sesame finish, light and lively.
Ingredients (serves 4)
- 3 cups cooked rice
- 1.5 lbs shrimp
- 3 eggs
- 1 cup frozen peas
- 1 cup corn
- 4 scallions
- 3 cloves garlic
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- 2 tablespoons vegetable oil

Peel and devein shrimp.

Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Cook shrimp for 2-3 minutes until pink. Remove to a plate.

Add 1 tablespoon oil and scramble eggs until just set. Remove to a plate.

Add remaining oil and minced garlic. Cook for 30 seconds.

Add rice, breaking up clumps. Stir-fry for 3 minutes. Add peas and corn. Stir-fry for 2 minutes.

Return shrimp and eggs to skillet. Drizzle soy sauce and sesame oil. Toss together. Top with sliced scallions and serve.
