Ingredients (serves 4)

  • 2 lbs chicken thigh
  • 4 cloves garlic
  • 2 tablespoons ginger
  • 4 scallions
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon sesame oil
  • 1 cup chicken stock
  • 1 tablespoon vegetable oil

    Pat chicken thighs dry. Heat oil in a large skillet over medium-high heat. Brown chicken on all sides, about 8 minutes total. Remove to a plate.

    Add minced garlic and ginger to skillet. Cook for 1 minute until fragrant.

    Stir in soy sauce, rice vinegar, sugar, and chicken stock. Return chicken to skillet.

    Reduce heat to low, cover, and simmer for 20-25 minutes until chicken is very tender and cooked through.

    Remove cover, increase heat to medium-high, and cook for another 3-4 minutes until sauce reduces slightly.

    Drizzle with sesame oil. Top with sliced scallions. Serve over rice.
