Steak Fajitas 🌮
Sizzling strips of seared steak with charred peppers and onions, ready for warm tortillas and all the fixings.
Ingredients (serves 4)
- 1.5 lbs steak
- 2 bell peppers
- 1 onion
- 8 tortillas
- 2 tbsp vegetable oil
- 1 lime
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp smoked paprika

Slice the steak against the grain into thin strips and toss with the chili powder, cumin, garlic powder, smoked paprika, and a big pinch of salt.

Slice the bell peppers and onion into strips.

Heat 1 tablespoon oil in a 12-inch cast iron skillet over high heat and sear the steak in a single layer until browned, about 3 minutes. Remove to a plate.

Add the remaining oil and cook the peppers and onion until charred at the edges but still crisp, about 5 minutes.

Return the steak with its juices, squeeze the lime over everything, and toss for 30 seconds.

Warm the tortillas in a dry pan and serve the fajitas hot with your favorite toppings.
