Teriyaki Pork and Vegetable Rice 🥦
Tender pork tenderloin glazed in a glossy teriyaki sauce with broccoli and snap peas over jasmine rice.
Ingredients (serves 4)
- 1.5 lbs pork tenderloin
- 2 cups jasmine rice
- 3 cups broccoli
- 1 cup snap peas
- 4 garlic cloves
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon sesame oil
- 1 teaspoon cornstarch
- ginger
- salt

Cook jasmine rice according to package directions.

Slice pork tenderloin into 1/4-inch thick medallions and season with salt.

Heat 1 tablespoon oil in a wok or large skillet over high heat. Cook pork in batches until cooked through, about 3 minutes per side. Remove and set aside.

In the same wok, stir-fry broccoli and snap peas until tender-crisp, about 4 minutes.

Whisk together soy sauce, honey, sesame oil, minced garlic, ginger, and cornstarch. Return pork to wok, pour in sauce, and toss until everything is coated and sauce thickens, about 1 minute.
