Chicken Pastitsada 🍝
Tender chicken braised in a rich red wine and tomato sauce with pearl onions, a Corfiot classic that tastes even better the next day.
Ingredients (serves 4)
- 1.5 lb chicken thigh
- 1 cup red wine
- 1 can crushed tomatoes
- 1 lb pearl onions
- 4 cloves garlic
- 2 tablespoons tomato paste
- 2 tablespoons olive oil
- 1 teaspoon oregano
- 1 bay leaf
- 0.5 teaspoon cinnamon
- Salt
- Black pepper

Heat olive oil in a large pot over medium-high. Season chicken with salt and pepper. Brown on all sides, about 6 minutes total.

Remove chicken. Add minced garlic and tomato paste to pot, cook for 1 minute. Pour in red wine and scrape up browned bits.

Return chicken to pot. Add crushed tomatoes, pearl onions, oregano, bay leaf, and cinnamon.

Simmer covered for 30 minutes, until chicken is tender and onions are soft. Season with salt and pepper.
