Ingredients (serves 4)
- 1 lb ground beef
- 8 corn tortillas
- 1 can red enchilada sauce
- 1 cup shredded cheddar cheese
- 1 onion
- 2 cloves garlic
- 1 tbsp vegetable oil

Brown ground beef in a skillet over medium-high heat with diced onion, breaking beef apart, about 8 minutes. Add minced garlic and cook 1 minute.
