Ingredients (serves 4)
- 1.25 lb ground turkey
- 1/2 cup breadcrumbs
- 1 egg
- 6 cups chicken stock
- 2 carrots
- 2 celery stalks
- 3 cups spinach
- 1 onion
- 2 garlic cloves
- 1 teaspoon thyme
- Salt
- Black pepper

Combine ground turkey, breadcrumbs, egg, salt, and pepper. Form into 16 meatballs.

Dice carrots, celery, and onion. Mince garlic.

In a large pot, heat 1 tablespoon olive oil. Brown meatballs for 6 minutes on all sides. Remove and set aside.

In the same pot, sauté onion for 3 minutes, then add garlic and cook for 1 minute.

Add chicken stock, carrots, celery, and thyme. Bring to a boil. Return meatballs to the pot and simmer for 18 minutes.
