Honey Mustard Chicken and Potatoes 🍯

- 1.5 lb potato
- 3 tbsp honey
- 3 tbsp dijon mustard
- 2 tbsp olive oil
- 3 cloves garlic
- 1 tsp dried thyme

Cut the potatoes into 1 inch chunks and toss them on a sheet pan with 1 tablespoon olive oil, salt, and pepper, then roast 10 minutes to give them a head start.
