Ingredients (serves 4)

  • 1 cup cooked lentils
  • 1/2 cup walnuts
  • 1/2 cup breadcrumbs
  • 1/4 cup tomato paste
  • 3 cloves garlic
  • 1/2 onion
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 2 cans crushed tomatoes
  • Salt and pepper
  • Fresh basil

    Pulse walnuts in a food processor until finely chopped. Mix with cooked lentils, breadcrumbs, tomato paste, minced garlic, minced onion, oregano, salt, and pepper.

    Form 16 meatballs and refrigerate 15 minutes.

    Heat olive oil in a large skillet over medium-high heat. Brown meatballs on all sides, 8 minutes total.

    Pour crushed tomatoes into the skillet. Simmer meatballs in sauce for 15 minutes.
