Ingredients (serves 4)

  • 1.5 lb chicken thighs
  • 3 potatoes
  • 3 carrots
  • 1 onion
  • 2 stalks celery
  • 3 cloves garlic
  • 4 cups chicken stock
  • 1 tsp dried thyme
  • 2 tbsp all-purpose flour
  • 1 cup frozen peas

    Season the chicken thighs with salt and pepper and brown in 1 tbsp oil in a Dutch oven over medium-high heat, 3 minutes per side. Set aside.
