Salsa Shredded Chicken Tacos 🌮
Juicy chicken simmered in salsa until it shreds with a fork, piled into warm tortillas for the easiest taco night ever.
Ingredients (serves 4)
- 1 1/2 lbs chicken breast
- 1 1/2 cups salsa
- 1 cup chicken stock
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp garlic powder
- 8 tortillas
- 1 cup shredded cheddar cheese
- 1/4 cup cilantro
- 1 lime

Combine chicken, salsa, chicken stock, cumin, chili powder, and garlic powder in a large saucepan and bring to a simmer over medium heat.

Cover, reduce heat to low, and simmer 22 minutes until the chicken reaches 165°F and is very tender.

Shred the chicken right in the pot with two forks and simmer uncovered 5 minutes so it soaks up the sauce.

Warm the tortillas in a dry skillet for 30 seconds per side.
