Taco Soup 🍲
A hearty, dump-and-simmer soup of beef, beans, corn, and taco spices topped with all your favorite fixings.
Ingredients (serves 6)
- 1 lb ground beef
- 1 onion
- 2 tbsp chili powder
- 2 tsp cumin
- 1 can black beans
- 1 can pinto beans
- 1 can canned corn
- 1 can canned tomatoes
- 3 cups chicken stock
- 1 cup shredded cheddar cheese
- 0.5 cup sour cream
- 1 cup tortilla chips

Dice the onion and brown with the ground beef in a large pot over medium high until no pink remains, about 8 minutes, then drain.

Stir in the chili powder and cumin and toast for 1 minute.

Add the drained beans, corn, canned tomatoes, and chicken stock and bring to a boil.

Reduce the heat and simmer uncovered so the flavors meld, about 20 minutes.
