Tater Tot Hotdish 🥔
Savory beef and vegetables under a golden shingled roof of crispy tater tots, Minnesota's most beloved casserole.
Ingredients (serves 6)
- 1 lb ground beef
- 1 onion
- 8 oz mushrooms
- 2 cups frozen mixed vegetables
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 1.5 cups milk
- 1/2 cup beef stock
- 1.5 cups shredded cheddar
- 2 lbs frozen tater tots
- 1 tsp salt
- 1/2 tsp black pepper

Heat oven to 400°F. Dice the onion and chop the mushrooms.

Brown the ground beef with the onion in a 12-inch skillet over medium-high, about 6 minutes, then add mushrooms and cook 4 minutes more. Season with salt and pepper.

Push the meat to one side, melt butter in the empty space, stir in flour for 1 minute, then whisk in milk and beef stock. Simmer 3 minutes until thick and creamy.

Stir in the frozen mixed vegetables and half the cheddar, then spread everything into a 9x13 inch baking dish.

Arrange the frozen tater tots in tight rows over the top and scatter with remaining cheddar.

Bake 35 minutes until the tots are deep golden and crisp and the filling bubbles at the edges. Rest 5 minutes before serving.
