Smothered Beef Burritos 🌯
Hefty beef and bean burritos blanketed in warm red sauce and melted cheese, baked until bubbling like your favorite Tex-Mex platter.
Ingredients (serves 4)
- 1 lb ground beef
- 1 can pinto beans
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- 4 tortillas
- 2 cups shredded cheddar cheese
- 1 can tomato sauce
- 1 cup beef stock
- 1 tbsp all-purpose flour
- 1 tbsp vegetable oil

Brown the beef in a skillet over medium-high heat, about 6 minutes, drain, then stir in half the chili powder, the cumin, garlic powder, and the drained pinto beans.

For the sauce, heat oil in a saucepan, whisk in the flour and remaining chili powder for 1 minute, then whisk in tomato sauce and beef stock and simmer until thickened, about 5 minutes.

Preheat the oven to 400°F. Fill the tortillas with the beef mixture and a third of the cheddar, roll tightly, and place seam side down in a 9x13 baking dish.

Pour the red sauce over the burritos and cover with the remaining cheddar.

Bake until the sauce bubbles and the cheese melts, about 15 minutes.
